Chemical properties
Divided into α-type and β-type two. Sweet, slightly bitter aftertaste. Soluble in water (250%), insoluble in ethanol (0.4%), insoluble in ether. Free states are present in coconut shells and in the exudation of Fraxinusornus, as well as trace amounts in citrus peels, sprouted seeds and molasses.

D-Mannose is a carbohydrate with a white crystal or crystalline powder, sweet and bitter. dissolved in water and microdissolved in ethanol.

D-Mannose plays an important role in the glycosylation of molecules in multiple cellular processes. It involves the N and O glycosylation of bovine protein products used for infant formula. It is also responsible for the O-glycosylation of the helper T cell-derived interlukin-17A (an important cytokine molecule).
